I answered this years ago. It is a mistake to eat or drink raw sourdough. It contains phytic acid. This is know as an anti-nutrient because it binds to minerals. I became deficient in all my minerals. It was debilitating. Phytic acid also cause dental caries. I got so many cavities, I lost count. So it is definitely a BIG MISTAKE to drink sourdough shakes.
It is not possible to change your body's pH. A biological mechanism called homeostasis actually prevents you from being able to do so via consumption of food or drink, because only a vary narrow pH range will allow you to survive. Any pH above 7.45 can send your body into respiratory or metabolic alkalosis, and any pH below 7.35 can send your body into respiratory or metabolic acidosis, which can lead to death.
There is no point in attempting to change your body's pH - your kidneys and lungs will simply rebalance to the appropriate pH level.
I don't know what cured your clumsy hand, but it's got nothing to do with the food you eat, or the pH of that food. You can continue to enjoy your sourdough treats, if you find them tasty, but they will not treat, prevent, or cure any illness.
