Digestive problems - loose stool in the morning, constipation in the evening

For the last week or so, I've been having problems with digestion, where I have loose stool every morning, but in the evening I cannot poop even though I feel the need to. During the day I feel gassy and bloated as well (but mostly just gassy). At first I thought it was some kind of a viral infection, but my body temperature is normal and I feel okay otherwise, I don't think viruses are the culprit. I also suspected that it might be the dairy since I eat cottage cheese before I go to sleep and as soon as I wake up every day. I consume one or two scoops of whey (concentrate) protein powder as well. Right now I'm trying to minimize consuming these in hope that my digestion will normalize.
Do you have any other recommendations on how I should go about this?

On another note, I do eat quite a lot daily (usually 6-7 meals a day), since I'm a very active person (weightlifting 3 times a week, swimming 1-3 times a week), and I'm trying to gain weight. My diet consists mostly of healthy foods: oatmeal, whole wheat crackers, natural peanut butter, bran cereals, brown rice, potatoes (both white and sweet), brocolli (a lot of), zucchini, bell peppers, apples, bananas, chicken, salmon, tuna, and the aforementioned cottage cheese.
