I know how that feels. I had the munchies before and lord know I have them still on occasion. Do you exercise regularly? Exercising regularly helps you sleep early and continuosly without the need to munch at night.
If it really cant be avoided, have some low calorie crackers and tea. Eat just enough to fill the tummy and sleep it off. I think the munchies come about more by your body getting used to eating at might rather than needing to eat.

Hi, one of my diet let downs was over eating at night. Just like you, i would eat a healthy dinner but then would be hungry before bed even though i had a big dinner. I started eating more throughout the day. For example: add fruit or yoghurt to my breakfast and lunch and ensure i ate a high fibre or high protein snack at about 4pm. Since i have done this, i am not hungry at night and don't crave the wrong foods just before bed.
You may feel you are eating too much during the day but i have began loosing weight because i'm not overeating at night and leeting it bloat me over the night.
Eat a balanced dinner with some protein, veggies, and complex carbs.
Eat some sort of dessert...sugar free/fat free pudding, Skinny Cow Ice Cream bar, something to signal "done", if you need it (I do)
If you have to get up in the night to eat, keep some low fat yogurts around. One should do the trick to give you something in your stomach that will be easily digestible, yet with some staying power. Or a low fat cheese stick, or some almonds or other nuts.
