As long as there are no cuts in your mouth, I don't think you need to be worry about getting HIV.
You need to tell the differences between cold sores and herpes. (you might need to ask this in herpes community).
Why don't you have an appointment with dentist for receding gums?
Not possible, it depends on the general health of the person, can't say for sure, but definitely not less than 2 months. It usually takes years.

Plus one last stupidity of mine was that I kissed my boyfriend while my cold sore were in the healing process - he had one too... and that was 25 days ago...
I did some research and I found out that it is HSV (I didn't have a decent knowledge about std back then)...
No I am totally fine with HSV as long it is a matter of anything but HIV
I'm not sure about the receding gums thing wether it has started a while ago or it is a recent thing but at least I can tell that there is enough recession for me to notice...

No documented evidence that unprotected oral sex leads to HIV. The risk for contracting oral sex in your case is likely zero. The only thing i am worrying about is your bad oral hygiene (how bad is your oral health before your oral sex?).
Protected oral sex has perhaps zero risk for contracting HIV which i do think you are overly stressing yourself.
I don't think you should be concerned with contracting HIV.
