There are some good cookbooks on this subject. Tofu is very quick and easy to prepare, and vegetables are always quick to steam. And if you get a pressure cooker you can speed up cooking time for beans and grains and everything else, and if you get a slow cooker you can cook while you sleep. As said above, fish prepared well takes very little time to cook.
