That sounds like a good plan. You can marinate some skinless chicken breasts in something like lite Italian dressing or make your own and grill it. Tasty. I cut up mango and squeeze lime juice over the mango and then put that on top of the chicken with a little brown rice. Very tasty.
Tonight I am making pork chops in a pot. I put in brown rice to the bottom of the baking pan, then place pork chops on top, then I place sliced onions, red and green bell peppers, sliced tomatoes all on top. I put on some Italian seasoning. And then pour one can of no fat low sodium beef broth over top and bake. Pretty tasty and good for you.
Watch portion control. The old trick of using a smaller plate helps. And I often try to stretch dinner into two nights so then I am prone to eat less if I'm trying to have enough for dinner the next night too.
You can buy a bag of grilled chicken (close to where they sell lunch meat usually) and put that with your salad, add some nuts, some dried cherries and use a light dressing or oil/vinegar (I skip the oil and just use salad vinegar) and that is a nice, lean dinner.
